Wine
Dalwhinnie Mesa Shiraz is sourced from the original Dalwhinnie Pyrenees vineyard, adjacent to their Forest Hutt plantings a little further down the hill.
The fruit is harvested in distinct batches and fermented separately for 10-14 days. The wine is pressed to tank for malolactic fermentation, then racked to predominantly seasoned French oak barrels.
After maturation, the final blend is assembled. Some barrels of Dalwhinnie's Moonambel Shiraz and Eagle Shiraz are included to add depth to the wine.
Deep purple, Dalwhinnie Mesa Shiraz has a ripe dark fruit core, spicy complexity, powdery tannins and subtle oak. Cellaring potential is 10 years.
